The Southern Lady Cooks

Nutty Oat Pancakes - CopyYou will love the nutty oat flavor of these pancakes. Serve them with syrup of your choice, honey, molasses and lots of butter!

1/2 cup whole wheat flour
1 cup all-purpose flour
3/4 cup rolled oats
1/4 cup sugar
2 tablespoons baking powder
1 egg
2 teaspoons vanilla flavoring
2 tablespoons oil (I use Canola)
1/4 cup sour cream
1 cup buttermilk
1/2 cup walnut pieces
Butter or margarine for cooking
Mix all ingredients with a spoon and fold in walnuts.  This will be a thick batter. You won’t be able to pour it.   I dip it with a 1/4 cup measuring cup for each pancake. Have your griddle or skillet hot, add a pat of butter and cook pancakes on each side until browned.  Makes about 10 pancakes depending on size you make them.  Enjoy!
